Happy Birthday!!!


I am not much for getting personal on this little blog but today marks a special occasion! Today my husband joins me on the official countdown to 30!! To celebrate we are headed to Portland for lots of local beer and great friends. I can't believe that we have spent the last 10 birthdays together. If that doesn't deserve a Holy Moly then I am not sure what does! Every year gets better and I cant wait to see what the next 10 Look like. You are an amazing person and I hope that you get everything that you wish for this year!!

The Dirty Dozen




 I have been looking forward to writing this post for awhile now. Mainly because I LOVE the way the title just rolls off the lips. When I first heard about the list I may have even giggled a bit… Apparently, it’s the little things in life that make me happy or I am just weird…. The jury is still out on that one. A few months back the Environmental Working Group, an advocacy nonprofit, released their annual list of the top 12 fruits and veggies most contaminated by pesticides better known as “The Dirty Dozen”.
Without further ado:
1.       Apples
2.       Celery
3.       Strawberries
4.       Peaches
5.       Spinach
6.       Nectarines (imported)
7.       Grapes (imported)
8.       Sweet Bell Peppers
9.       Potatoes
10.   Blueberries
11.   Kale
12.   Collard Greens
After being properly washed and prepared to EAT, some of the above Dirty Dozen members (how many times in one post can I squeeze in that name) had as many as 50 FREAKING pesticides on them!!!! Holy Moly! Not sure about you but I don’t think that chemicals were make to be eaten…We baby proof that cupboard for a reason!!!!
If you are anything like me and felt like you needed a shower after reading this, then let me refresh you by introducing you to the CLEAN 15! Unlike most of their dirty counterparts, many of the fruits and veggies on this list have thick skins or face fewer threats and need less pesticides as a general rule.

According to the EWP "Picking five servings of fruits and vegetables from the 12 most contaminated would cause you to consume an average of 14 different pesticides a day," But they also say that by picking the same number of servings of fruits and veggies from team Clean 15 you will slash the volume of pesticides by 90%! If only I can find a sale at the mall with that kind of savings!!! This list is not to say that the dirty produce is bad and the clean is good.  I look at this list as a helpful shopping guide. Times are tough out there and we all can’t afford to buy EVERYTHING organic. If you can only purchase a few things organic then put your money where it is most needed or... 
better yet grow your own if possible.

Pretzels & Beer


I don’t eat fast food and really try and make an effort to steer clear of “junk” food in general. I have to admit that sometimes I am more successful at this than others. I have tried to adopt the philosophy that if you do partake in so called “guilty pleasures” than you should make them yourself. If you really want a chocolate chip cookie but have to go to the store to get the ingredients and then come home and make them yourself you are more likely to eat them less often.  The same goes for every other store bought packaged product in your cupboard or freezer. At the very least it makes you stop and forces you to think about how bad you truly want that cookie, candy, potato chip ect. Think about all the calories and money we would save if every time we wanted junk food we had to make it ourselves.

So, last year for Super bowl I decided to make soft pretzels. They were good but I don’t think I would have bragged about them. As soon as I tried one I knew that there was room for improvement. They were just so “bready”.  Since Football Sundays were over and bikini season was ahead I wasn’t in any rush to try my hand at another batch.
A couple months ago I was at the Mall and the Pretzels smelled so good I couldn’t resist! I couldn’t believe I was spending $5 for something that is going straight to my thighs and is SOO cheap to make. I guess sometimes feeding a craving is worth it??  As I sat and ate my $5 twist of gold I couldn’t help but think about the last time I made pretzels and how disappointed I was with the results. I decided I should try again. As soon as I had the thought, something else popped into my head….it was a picture of my husband and I at the beach with pretzels pinned to our bodies!! Mine on my thighs and his on his belly…not a good look, let me tell ya!! I came to the conclusion that I would need to wait until we had a “reason” to make them.

It didn’t take long…just a few weeks later  a friend asked if I could make soft pretzels for the SURPRISE Pub Birthday Party (Hence the pretzels AND beer title ) she was throwing for her fiancĂ©, who happens to be my brother-in law’s brother. What is that to me?????? Anyway, I could not resist!

I looked high and low for the perfect recipe and came back with nothing. So I kinda came up with my own version of the many “Mall Pretzel” recipes out there.
      
      Ingredients
  • 4 teaspoons active dry yeast
  • 1 teaspoon white sugar
  • 1 1/4 cups warm water (110 degrees F/45 degrees C)
  • 4 cups bread flour
  • 1/4 cup brown sugar
  • 1 1/2 teaspoons salt
  • 1 tablespoon melted butter
  • 1/2 cup baking soda
  • 4 cups hot water
  • 1/4 cup course kosher salt, for topping
     Directions
  1. In a small bowl, dissolve yeast and 1 teaspoon sugar in warm water. Let stand until creamy, about 10 minutes.
  2. In a large bowl, mix together flour, sugar, and salt. Make a well in the center; add the melted butter and yeast mixture. Mix and form into a dough. If the mixture is dry, add one or two tablespoons of water. Knead the dough until smooth, about 7 to 8 minutes. (I dumped everything in the bowl of my electric mixer fitted with the dough hook and let it go on low for about 8 minutes.) Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with clean damp kitchen towel and let rise in a warm place (an oven that is turned off but the oven light is left on works perfect) until doubled in size, about 1 hour.
  3. Preheat oven to 450 degrees F. In a large bowl, dissolve baking soda in hot water.
  4. When risen, turn dough out onto a lightly floured surface and divide into 12 equal pieces. Roll each piece into a rope and twist into a pretzel shape. Once all of the dough is all shaped, dip each pretzel into the baking soda solution and place on a greased baking sheet. Sprinkle with kosher salt.
  5. Bake in preheated oven for 8-10 minutes, until browned.

If you want to be really decadent, wait to add salt until after baking. Once they come out of oven you brush a tad of melted butter or margarine on top and sprinkle with butter. I hear they are also delicious tossed in cinnamon sugar.
These taste best RIGHT OUT OF THE OVEN!! I suggest that if you are making them for a party, do steps 1-4 and then stick them in the oven as guests arrive. If you are dead set on making ahead of time at least keep them warm in a low oven about 200-250 degrees.

After just spending a few minutes with GOOGLE I promise that you will find copy cat recipes (use sparingly) AND healthy alternative recipes (make all you want) to all your favorite snacks. You will also feel better knowing that you are NOT consuming the preservatives and chemicals that you normally would when you buy that store bought junk!

3 letters create so much darn controversy!


Hopefully by now you are well aware of BPA and all of its hazards. 
If not, than lucky for you, I have done some of the boring research for you! Until a year or so ago I didn’t know what BPA even stood for (bisphenol-A) and I sure as heck didn’t know why we weren’t supposed to have it or even what it is in. Aside from seeing a surge of BPA free baby bottles and hearing from my girlfriends that those were now the only exceptable ones to use. I was clueless and honestly didn’t mind. Then I started noticing BPA free Tupperware and my wheels started spinning!  What is this 3 letter thing and why is it being taken out of everything? To spare you the big words and yawn provoking explanations BPA is an industrial chemical that has been used to make certain plastics and resins since the 60’s. Some researchers believe that it is linked to cancer, diabetes and obesity to name a few.  In January of 2010 the FDA said it was concerned about BPA and our exposure should be limited. That’s all fine and dandy but its 2012 and most of us are still unknowingly serving infants, kids and ourselves BPA laden products on a regular basis. I myself was shocked to find out just where this cancer causing chemical was lurking! Here I was thinking that I was being healthy by keeping my pantry stocked with canned items such as beans and tomatoes so I could whip up a quick dinner on a busy week night but I never knew I was serving up a side dish of chemicals with our chili. While stores like Kroger have recently BANNED BPA from all of their store brand products including Kroger, Value Brand, Private Selection, Comforts, Mirra, Active Lifestyle and Fresh Selections. The Beginning

I am channel surfing…there is NOTHING on. I have seen every episode of every Housewife & Perez can no longer hold my attention since he has gone soft. I can’t stand “the doctors“, but today’s show entitled “what’s in our food” looks promising. I knew I would get angry with the knowledge I was about to acquire but I was not prepared for visceral reaction that I felt. Wanting more and not sure if I should whole heartedly believe what I heard, I headed to the internet. I think it’s obvious that it wasn’t all rainbows and sunshine.

The laundry list of chemicals that are in our food could make you wish you were anorexic. The problem is that I have been here before.  As a fast food junkie in a college nutrition class (I can now count on 2 hands how many times I have had fast food in 4 years) After I watched FOOD INC. (some questioned if I had been paid by the way I begged any and everyone to watch.) Following the FOOD REVOLUTION (you wouldn’t offer a child a candy bar everyday so why chocolate milk???)  I would get so excited to educate and change the world but my friends and family would basically roll their eyes at me. So feeling defeated, the anger and the commitment to the cause would usually fade. This time it is different. Maybe it’s because I am knocking on “30’s” door, or that I need something to focus my ever wandering mind on, or simply that I am no longer willing to be a bystander. I know that I CAN change and if I can, you CAN too. Nothing is hard, it’s just new!
